Renowned for its depth, elegance and unmistakable style, Charles Heidsieck stands among
the most celebrated Champagne houses in the world. We invite you to indulge in an
exclusive Charles Heidsieck masterclass at the Yacht Club’s Bommie Restaurant, an intimate
journey into the artistry, complexity and storied heritage of this iconic Maison.

Guided by an expert host, guests will savour a tasting of four exceptional champagnes, each
carefully selected to showcase the signature complexity, texture and finesse that define
Charles Heidsieck.

For those looking to linger a little longer, elevate your experience with the option to add a
bottle of Charles Heidsieck Blanc de Blancs Champagne and enjoy a reserved table on the
deck after the masterclass. It’s the perfect way to unwind, glass in hand and soak up the
island atmosphere as the day unfolds.

Price: $75 per person - 3.30pm- 5.30pm
Available as a stand-alone experience.

Bommie is led by award-winning Executive Chef Ryan Locke, whose modern Australian menu champions native ingredients, peak season regional produce and a true sense of place. Located within the sculptural Hamilton Island Yacht Club, Bommie is the island’s signature dining destination.

Bommie takes its name from the Aboriginal word “bombora”, a term for the vibrant, shallow reef formations that surround Hamilton Island, often visible from Bommie Deck at low tide.

What makes dining at Bommie exceptional:

  • A modern Australian menu celebrating seasonal, sustainable and locally sourced produce, crafted by Executive Chef Ryan Locke.
  • Choice of Tasting Menu or Chef’s Signature Degustation -  a deeper, curated progression.
  • Optional wine pairings that highlight the depth and character of each course.
  • Breathtaking views over Dent Passage and the Whitsundays, with striking floor-to-ceiling sculptures by artist Glenn Murray complementing the contemporary design.
  • For special occasions, the Black Coral private dining room offers an intimate setting for up to 16 guests for exclusive use.
  • Recognised by the Australian Good Food Guide with a Chef Hat for three consecutive years (2023–2025) and two Chef Hats for 2026
